The rainbow food trend has finally made its way to sushi

In a world where foods trend all the time, it’s hard to keep up with what the coolest thing is. The rainbow food trend, however, has taken over Instagram. In fact, it’s cast aside all the regular, beige food we held dear, making brightly coloured foods the only acceptable things to see on social media. And while it seems like only yesterday that trend-loving foodies freaked out over rainbow bagels, and rainbow donuts, and rainbow grilled cheese, they can now do so for sushi.

The modern form of sushi has existed for hundreds of years, but the rainbow food trend cares not for sentimentality nor tradition. And despite the fact that colourful fish and vegetables were already being used to create sushi by generations of chefs, they’re no match for the Instagram-friendly, colourful pop of rice that’s been treated with various plant-based dyes.

A few have taken on the myriad colours when creating this rainbow food trend with a good mix of natural ingredients. Others have turned their sushi psychedelic via the less healthy artificial food colouring method. Rainbow sushi has also become a popular recipe among vegans and foodies who enjoy preparing their own foods. Regardless of the reason, the colourful plates of this beloved Japanese cuisine are now being uploaded to Instagram under hashtag #rainbowsushi.
