Baker creates geometric pies with patterns and colour
When we think about beautifully designed desserts, cakes often get all the credit. But you can’t underestimate the power of creative pies. Lauren Ko is a Seattle-based baker who got her start after her Instagram account of pies with unique geometric designs went viral.
From complex lattices to patterns made of colourful fruit, her spectacular, geometric pies showcase Lauren’s incredible talent and creativity. Which is surprising, seeing as how she started baking pies just 2 years ago.
While many bakers swear by precise recipes, Lauren often improvises when it comes to her pies’ surface designs:
“I’m driven by colour and pattern, so I’m constantly brainstorming colour combinations and geometric patterns that I think I can replicate with pie dough [and] fruit,” she explains.
“What I create during a particular baking session is also often informed by produce that is in season and what’s currently in my fridge. My final products are generally happy accidents.”
Many of her pies utilize a lattice pastry approach. However, she’ll often arrange the long, thin strips of dough in complex weavings and graceful crisscrossing patterns.
Her website has grown from being a pet project to an online phenomenon that has caught the attention of the likes of Martha Stewart and Oprah. It has also allowed Lauren to quit her job as an executive assistant in higher education to pursue her passion full-time.
